Dinner day 10. Miscellaneous vegetables in the crisper drawer nearing the end of their prime means stir fry night! Boneless skinless chicken thighs, garlic, and some Thai basil from our herb garden, plus a sauce made from bone broth, coconut aminos, and vinegar to the rescue. I am not eating rice during my 30 day paleo reset but felt like I needed some more starch today so I nuked (yes, in the microwave) a potato for the base. So I thought we love #paleomg pizza spaghetti pie and we love buffalo chicken so why not marry the two❤️I slow cooked chicken thighs in the crockpot. Then I baked the spaghetti squash, shredded the chicken and mixed it with hot sauce. The last step was to mix the buffalo chicken, spaghetti squash with two eggs and bake for 50 minutes. It was divine!!!!
